A Truly Unique Flavor

 

We produce birch syrup every spring, immediately following maple season. The season is short, lasting only 1 to 2 weeks. It takes 150 gallons of birch sap, on average to produce 1 gallon of pure birch syrup.

 

Our syrup is bottled in 2 grades: early run and mid/late run. Early run has a lighter, sweet flavor from the first sap of the season while mid/late run has more tanginess and is less sweet. Birch Syrup is great on ice cream, as a glaze on meat and fish, and mixed into sauce, dressing, marinade or drinks.
